The olive oil of this variety has an intense green colour, and a slight scent of fresh grass; its taste reminds of fresh almonds with a spicy aftertaste.
Olive oil with an high content of polifenoli and tocoferoli.
Recommended raw with carpaccio of fish or meat (very thin slices of raw fish or meat), on vegetable or legume soups.
